3 Authentic Mexican Recipes!
One of the best parts about supporting the VIDA project is being invited into the homes of rural Totonacos to sample traditional cuisine. Before the adoption of industrial agriculture and mono-cropping began in the eighties, fruit and vegetable crops from the region were no more expensive than staples like corn and beans.
The culinary legacy of the area still survives, even as healthy foods have become unaffordable for most Totonacos. Here we present three simple, delicious recipes for salsa verde, guacamole and cake, collected from the families we work with.
